The Whiskey production of the Irish distillery is very close to the Wine production. Only barely is used, which is harvested in a particular location, to catch the 'terroir' of a region. The barley of this bottling is from the Farm Tinnashrule and is growing in the rain shadow of the Blackstairs mountains in the north of Enniscorthy and is cultivated by John Crowley. The gilly lowland barley fields are benefitting from the porous clay grounds. To lose as little 'terroir' as possible, Waterford Whiskey is in contrast to other Irish Whiskey only distilled twice. The maturing is 46% in Bourbon casks, 22% in fresh American, 15% in fresh French oak casks and 17% in sweet Wine casks. Exclusive bottling for the German market.
